When guests are on the doorstep, and treats need to be prepared quickly, a cracker and sour cream come to the rescue. From these simple and affordable products, a delicate dessert is obtained that can be diversified by adding berries, chocolate, fruits, marmalade, etc.

General principles of cooking

Crisp cracker goes well with condensed milk and sour cream. These products make a great dessert. It will take very little time to cook it. It remains only to wait until it freezes.

A small cracker with poppy seeds is best for a cake. Round or square creamy break into small pieces.

The dessert is formed in layers, or all the ingredients are combined, stirred, laid out in a mold covered with a film, and left in the cold until completely solidified.

The cake can be made on the basis of cracker and butter. To do this, grind cookies into crumbs using a rolling pin or a blender. Then it is combined with oil, kneaded and rolled into a layer.

The filling is made from sour cream, whipping it with sugar or powder. For a change, cottage cheese, condensed milk, butter is added to it. The dessert will be fragrant if you add vanillin, zest of lemon or orange to the cream.

The cake must be kept in the cold for at least three hours, but it is better to cook it in the evening and leave it overnight.

You can diversify the dessert by adding pieces of fruit, chocolate, marmalade or berries into it.

Decorate the cake with chocolate or coconut, cocoa powder, berries or fruits.

Recipe 1. Classic cracker and sour cream cake

Ingredients

sour cream 15% - liter;

vanilla sugar - two bags;

sweet cracker - 600 g;

gelatin - 25 g;

white sugar - 400 g;

purified water - 120 ml.

Cooking method

Pour gelatin into a small bowl, fill with cold water and leave to swell for 15 minutes. We leave the small cracker whole, and break the large one into small pieces.

Set a container with swollen gelatin over a pot of boiling water and heat the mixture, stirring until the grains of gelatin are completely dissolved. We do not bring it to boiling, otherwise it will lose its properties.

Remove the bowl from the water bath and leave until completely cooled. Combine sour cream with vanilla and white sugar. Beat at medium speed with a mixer until the sugar grains are completely dissolved.

We introduce dissolved gelatin into sour cream, add cookies and stir. We cover the form or container with cling film and put the resulting mixture into it. The top is also covered with a film. Sent in the cold for several hours to completely freeze the dessert. Before serving, remove from the form, carefully turn and remove the film.

Recipe 2. Cake made from cracker and sour cream with condensed milk

Ingredients

50 ml of purified water;

half a liter of condensed milk;

200 ml of sour cream;

350 g sweet cracker;

20 g of gelatin.

Cooking method

In a silicone mold we spread two-thirds of the small cracker.

Pour gelatin into a deep plate, fill it with hot water. Stir and leave to swell for a quarter of an hour. We place a plate over a pot of boiling water and warm, stirring, until it is completely dissolved.

Combine the condensed milk in a deep bowl with sour cream and warm dissolved gelatin. Stir thoroughly until a homogeneous mixture is obtained. Pour it into a silicone mold. Spread the remaining cracker on top, slightly pressing. We set at least five hours in the cold. Turn the dessert onto a flat dish

Recipe 3. Cracker and sour cream cake with bananas and nuts.

Ingredients

280 g of sweet crackers with poppy seeds;

a handful of walnuts;

half a liter of sour cream 20%;

a bag of vanillin;

two bananas;

15 g of instant gelatin;

180 g of white sugar.

How to cook

We spread sour cream in a deep bowl, add vanillin and sugar. We begin to beat at low speeds with a mixer, gradually increasing them, until the sugar grains dissolve.

Pour gelatin into a small plate, pour five tablespoons of hot water, and stir until it is completely dissolved. Set aside to cool.

Pour warm gelatin into a sour cream, while stirring intensively.

Remove the peel from the bananas. Finely chop the pulp of the fruit. We chop the walnut kernels in a blender into not too small crumbs. Put nuts, bananas and crackers in a sour cream and mix. Leave to soak for a while, then stir again.

We cover the form with cling film so that its edges are on the sides. So it will be easier to extract the dessert. We spread in it a mixture of sour cream with fruits, nuts and crackers. We cover with a film on top and leave it to solidify in the cold. Carefully remove the cake from the mold, put it on a flat dish, remove the film and decorate with banana slices and nut crumbs.

Recipe 4. Cracker and sour cream cake with chocolate and fruit.

Ingredients

half a liter of sour cream;

one apple;

300 g sweet cracker;

a pack of jelly;

200 g of chocolate;

one pear;

30 g of instant gelatin;

150 g of powdered sugar.

Step by step recipe

Pour gelatin into a suitable dish, fill it with cold water and set aside so that it swells.

Combine sour cream with icing sugar and shake with a whisk. Place a dish with swollen gelatin over a pot of boiling water and heat it, stirring constantly, until the product is completely dissolved.

We break the cracker, put it in sour cream and stir. We line the shape with a film so that its edges hang. Three chocolate and sprinkle the bottom of the mold. We spread a third of the mixture of sour cream with cracker, sprinkle with grated chocolate. So we spread the whole mixture in three layers, sprinkling each with grated chocolate.

Peel the apple and pear, remove the core and cut into thin slices. Slightly let the fruit in the pan, pouring quite a bit of water. Cool and spread on top, slightly pressing. Leave the form in the cold until completely solidified.

Recipe 5. Cracker and sour cream cake with banana and strawberries.

Ingredients

200 g of sweet cracker;

9 g vanilla sugar;

300 g thick sour cream;

20 ml of sunflower oil;

60 g of boiled condensed milk;

120 g plums. oils;

100 g of powdered sugar;

100 g of strawberries;

2 bananas.

How to cook

We put the cracker in a plastic bag and grind it into small crumbs with a hammer and a rolling pin. Pour the crumbs into the plate. Melt the butter, cool and combine with the crumbs. Knead, collect the mass into a ball.

We spread the improvised dough on a sheet of parchment, cover with the second. Pre-grease them with vegetable oil. Roll out into a circle with a diameter slightly larger than the shape.

Put it in shape with the bottom parchment. Bake for ten minutes in the oven, preheated to 180 C.

Combine chilled thick sour cream with vanilla sugar and powdered sugar. We interrupt the submersible blender until smooth. We send sour cream to the refrigerator.

We take out the base from the mold, cool and grease the bottom with boiled condensed milk. Remove the peel from the bananas, cut the pulp of the fruit into thin slices. We spread the bananas on a layer of boiled condensed milk. Cover them with chilled sour cream. Spread banana and strawberry slices on top. Grind with powdered sugar.

Recipe 6. Cake made from crackers and sour cream with cottage cheese and canned peaches.

Ingredients

half a kilogram of cottage cheese;

a can of peaches;

80 ml of sour cream;

30 square crackers;

90 g of drain oil .;

100 g of white sugar.

Glaze:

60 g of cocoa powder;

80 g of sugar;

60 g of sour cream.

Cooking method

Put the cottage cheese in a bowl and beat with a hand blender until pasty. Add sour cream, soft butter and sugar. Continue to interrupt until a smooth curd cream is obtained.

Cut canned peaches into small slices. Leave one half for decoration.

Line the bottom of the mold with foil. Lubricate the bottom with a small amount of curd cream. Lay the cracker in one layer. Cover the cookies with a layer of cream and smooth. Put peaches on the cream. Form the cake in this way until the cream and cookies are over. The last layer should be a cracker. Cover the top with foil and send for two hours in the cold.

Put glaze ingredients in a saucepan. Mix until smooth, put on fire and bring to a boil, constantly stirring. Cool. Remove the cake from the refrigerator and cover with icing. Garnish with slices of canned pepper on top.

Cracker and sour cream cake - tips and tricks

You can decorate the dessert with cocoa powder, berries, slices of fruits or nuts. Before preparing gelatin, read the instructions on the packaging. The amount of gelatin depends on the amount of sour cream.

If you want a diet dessert, take low-calorie sour cream.

Sour cream for dessert is better to take with a high percentage of fat content.

For flavor, add zest of orange or lemon, vanilla extract to dessert.

If you use homemade sour cream, do not beat it for a long time so that it does not turn into oil.
