Chicken drumsticks in sauce - basic principles of preparation

Chicken drumsticks in sauce are cooked in a pan, in the oven or in a slow cooker. So that the meat does not become dry, it is pre-fried until golden brown.

Chicken meat perfectly absorbs the aromas of various spices and herbs. What seasonings to use for cooking, everyone decides for himself. However, it is worth recalling that some spices during the frying process can acquire an unpleasant smell and taste. For example, garlic, if overcooked. To prevent this from happening, proceed as follows: garlic is cut into thin slices and put in hot oil and fry for several seconds. Then it is removed, and aromatic oil is used to prepare the lower legs.

The sauce can be prepared on the basis of tomato, sour cream, cream or soy sauce. Onions, spices or other ingredients are added to it. Recipe 1. Chicken drumsticks in sweet and sour sauce

Ingredients

chicken drumstick - four pcs.;

fresh greens;

sweet pepper pod;

sesame;

head of purple onion;

half a glass of filtered water;

80 ml of soy sauce;

90 ml of refined oil;

80 ml of ketchup;

a pinch of black pepper;

30 ml of fruit vinegar;

three cloves of garlic;

20 ml of liquid honey;

a small slice of ginger root.

Cooking method

1. Rinse chicken drumsticks and pat dry. Place a frying pan with refined oil on high heat. Put the drumsticks in a hot oil, pepper and fry on all sides until golden brown.

2. Pour soy sauce into a deep bowl, add fruit vinegar, honey and ketchup to it. Stir well.

3. Peel the cloves of garlic and squeeze them through the press into the bowl.

4. Peel the ginger root and chop on a fine grater. Add to sauce and mix.

5. Peel the onion. Rinse pepper and release from seeds. Grind vegetables in small squares. Put them in a pan where the meat was fried, and sauté until tender. Then put the shanks to the vegetables and pour everything in a spicy sauce. Add a little filtered water, cover and simmer for about 25 minutes. Put the prepared drumsticks on a dish, pour the sauce, sprinkle with finely chopped fresh herbs and sesame seeds.

Recipe 2. Chicken drumsticks in a fragrant sauce

Ingredients

60 g butter;

fresh parsley;

eight small onions;

60 ml of cold water;

125 g of bacon;

10 g starch;

four chicken drumsticks;

salt;

clove of garlic;

30 g of fresh tarragon;

12 champignons;

Garni bouquet;

300 ml of red wine.

Cooking method

1. Peel the small onions from the husk, cut each into four parts. Grind the bacon into small pieces.

2. Dissolve half the butter in a frying pan over moderate heat. Put the bacon and onions in it. Stir fry for about three minutes. Then put the fried onion and bacon on a plate.

3. In the pan where the onions were fried, dissolve the remaining oil. Wash and dry the chicken drumsticks. Put them in a pan and fry on all sides, three minutes on each.

4. Now add the fried onions and bacon to the meat. Cut the peeled garlic into thin slices and add to the pan. Rinse the champignons, wipe with a napkin and grind with thin plates. Place the mushrooms in the pan. Pour in the wine, add tarragon and a bouquet of garni. Season with salt and pepper. Stir, cover and cook over moderate heat for about an hour until the chicken meat is tender.

5. Transfer the contents of the pan to a deep plate and cover it with foil. Remove the garnish bouquet from the pan and discard.

6. In a deep bowl, dilute the starch with water to a paste. Put it in a pan with the remaining liquid. Bring to a boil, reduce heat and simmer for a minute, constantly stirring. Serve chicken legs with sauce.

Recipe 3. Chicken Drumsticks in Ginger Sauce

Ingredients

honey - 40 g;

six chicken drumsticks;

tomato - 30 g;

10 ml of vinegar;

garlic - three cloves;

30 ml lean oil;

Red pepper;

20 ml of soy sauce;

salt;

onions - 100 g;

30 g of grated fresh ginger root.

Cooking method

1. Drain the washed chicken drumsticks with a paper towel and put in a deep bowl.

2. In a separate bowl, combine the tomato paste with honey and garlic squeezed through the garlic press. Season with pepper. Pour in soy sauce and vinegar. Stir well.

3. Pour the shins with the resulting marinade, cover with cling film and put in the refrigerator for two hours.

4. Cut the peeled onions into cubes.

5. Heat the oil in a pan. Wipe the drumsticks from the excess marinade and put in the pan. Fry the meat over high heat until golden brown on all sides. Put the fried drumsticks on a plate.

6. In the same pan, put the onions and pass until soft. Put the drumsticks and fill with the remaining marinade. We clean the ginger root from the peel and three on a fine grater. Add it to the meat and mix. We cover the pan with a lid and twist the fire to a minimum. Stew chicken legs in the sauce for 20 minutes. Serve with crumbly rice or pasta.

Recipe 4. Chicken legs in spicy sauce

Ingredients

olive oil - 50 ml;

chicken drumsticks - ten pcs.;

ground red pepper;

table salt;

5 ml of wine vinegar;

six cloves of garlic;

90 ml of tomato sauce Krasnodar;

30 g butter;

75 ml of chili sauce;

30 ml Tabasco sauce.

Cooking method

1. Peel three cloves of garlic and pass through a press into a deep bowl. Add olive oil to it and season with pepper and salt. Stir well.

2. Dry the washed chicken drumsticks with napkins. Grate each resulting mixture and put on a baking sheet. Put in the oven for half an hour. Bake at 180 degrees.

3. Combine the melted butter with chopped three cloves of garlic, sauce "Chili", "Tabasco", "Krasnodar", wine vinegar. Season with red pepper and stir. Warm the sauce, but do not bring to a boil.

4. Remove the drumsticks from the oven, pour the sauce and send to bake for another ten minutes. Put the prepared drumsticks on a plate, and pour the sauce into the saucepan.

Ingredients

sour cream - 200 g;

vegetable oil;

Cooking method

1. Wash the chicken drumsticks, dry them with a napkin and remove the yellow skin, which often remains at the base of the bone.

Ingredients

garlic - three cloves;

chicken drumsticks - six pcs.;

young greens - a small bunch;

150 g of carrots and onions;

5 g suneli hops;

40 ml of vegetable oil;

bell pepper pod;

sugar - a pinch;

30 g of tomato paste.

Cooking method

1. Washed and dried chicken drumsticks rub the sun-hops and leave to marinate for an hour.

2. In a pan, heat the oil and put the meat in it. Fry it over high heat until golden brown. We shift the tibia onto a plate.

3. We clean the onion and shred it in half rings. Cut the peeled carrots into thin strips. Fry the vegetables until tender in a pan where the drumsticks were fried.

Chicken drumsticks in sauce - tips and tricks

  • If you marinate the drumsticks in a liquid sauce, dip them in a napkin before frying. Otherwise, the chicken will be stewed, not fried.
  • Begin roasting your shins over high heat. After they have crusted, turn the heat off and continue cooking until soft.
  • The meat of domestic chicken is much tougher. Lubricate it with wasabi sauce or mustard and leave for half an hour. So it will become softer.
  • Take the shins of the same size to cook the meat evenly.
